Twice-baked Potato Casserole

 

Ingredients:

 

8 med. Sized baking potatoes, baked                      2 garlic cloves, minced

8 oz. shredded cheddar cheese, divided                 1 T.  chopped fresh chives

16 oz. sour cream                                                      1 tsp. salt

8 oz. cream cheese, softened                                   ½ tsp. pepper

½ c. milk                                                                     6 bacon slices, cooked & crumbled

½ c. margarine, melted                                            4 green onions, chopped

                                                                                    ¼ c. fresh chives

 

Directions:

 

  1. Peel cooked potatoes and coarsely mash pulp with potato masher.
  2. Stir in 1 cup cheddar cheese, sour cream, cream cheese, milk, margarine, garlic, 1 tablespoon chives, salt and pepper.
  3. Spoon into a lightly greased 13 x 9 inch baking dish. Bake at 350 degrees for 30 minutes or until thoroughly heated. 
  4. Sprinkle with remaining 1 cup cheese, bacon, green onions and chives.
